Sous Chef

Principal Duties and Responsibilities

  • Cleans food preparation areas as determined by law and company policy
  • Prepares foods to the specifications of the client in term of quality and timeliness
  • Ensures proper food service temperature
  • Seasons food according to recipes or client needs
  • Orders ingredients and spices as needed
  • Operates various kitchen appliances such as a blender, oven, grill, etc.
  • Portions, arranges, and garnishes food based on menu and client preferences
  • Assists other cooks during the food assembly process
  • Devises new recipes and suggests to management
  • Estimates expected food consumption and organises preparation
  • Keeps records and accounts of food purchases
  • Orders new menu items for specials or cheap deals
  • Meets with customers to ensure a great meal experience
  • Prepares any necessary sauces or accompaniments before meal service begins
  • Stays open until the last order is fulfilled
  • Cleans up after business hours
  • Communicates with management about how to improve meal service
  • Alters dishes based on consumer suggestions or requirements

Qualifications

The Sous Chef will have experience in both high volume and high standards with excellent organisational skills with the following specific qualifications:

  • hands-on experience of at least five years whilst working at a similar level within hotels or restaurants and ability to demonstrate passion for delivering great fresh food with excellent service
  • knowledge of Kenyan and European Cuisine including regional variants is essential for this role
  • organizational skills and good time management, together with some basic inventory control and budgetary skills
  • experience in all parts of the kitchen
  • strong communication skills
  • strong work ethic
  • immaculately presented

Education Requirements

Relevant post-High School qualification

 

Waiter

Principal Duties and Responsibilities

Greets customers and offers restaurant or cafe menus, answers questions about menu offerings, processes food and drink orders, carries food and drinks from kitchen to tables, and prepares bills and process payments.

  • Welcomes customers when they arrive at The Well
  • Introduces customers to the menu and points out and explains daily or seasonal menu specials
  • Answers questions about menu items, ingredients, and pricing
  • Takes customers’ orders for food and drink by writing them down and then entering them into the POS to generate captains orders for the barman and/or kitchen
  • Passes customer orders along to kitchen or bar staff for preparation
  • Prepares drinks and serves them to customers
  • Collects food orders from the kitchen, verifies that they are correct and that food is hot and correctly presented, and serves them to customers
  • Ensures that customers are satisfied with their meals and processes orders for additional courses if necessary
  • Removes used dishes, glasses, and flatware from tables
  • Prepares bills when requested from customers and delivers them to customers
  • Processes cash, credit cardand/or MPESA payments and returns change to customers, if necessary
  • Sets tables with table mats, dishes, glasses, and flatware and refills condiments
  • Maintains familiarity with menu items, specials, and restaurant information
  • Meets with managers and wait staff daily or regularly in order to learn about menu changes and specials as well as discuss upcoming reservations and customers with special needs

Qualifications

Exemplary customer service skills and interpersonal communication skills essential.

Physical stamina, attention to detail, ability to multitask, excellent written and verbal communication, teamwork- all required.

Additionally, must possess  ability to work under pressure, long and late hours, have a positive attitude, and be familiar with alcohol restrictions and licensing laws.

Education Requirements

Bartender/Barista

Principal Duties and Responsibilities

  • Plan, organize, and control the operations of the bar;
  • Take beverage orders from serving staff or directly from patrons;
  • Clean glasses, utensils, and bar equipment and keep the premises neat and tidy;
  • Check identification of customers to verify age requirements for purchase of alcohol;
  • Attempt to limit problems and liability related to customers’ excessive drinking by taking steps such as persuading customers to stop drinking, or ordering taxis or other transportation for intoxicated patrons;
  • Serve snacks or food items to customers seated at the bar;
  • Order or requisition liquors and supplies and assist the Bar & Restaurant Manager with various stock takes when required;
  • Arrange bottles and glasses to make attractive displays;
  • Take responsibility for security of stock in the bar area and restrict access of other staff and customers;
  • Other duties as required.

Qualifications 

Minimum of four years’ experience in a restaurant or catering environment including tray and bar service. In addition;

  • strong communication skills;
  • strong work ethic;
  • immaculately presented.

Education Requirements 

Relevant post-High School qualification

 

Cashier

Principal Duties and Responsibilities

  • Compute and record totals of transactions for bar and food orders;
  • Receive payment by cash, credit cards (using the PDQ machine for credit cards) or MPESA;
  • Record all transaction in ETR machine;
  • Count money in cash drawer at the beginning of shifts to ensure that amounts are correct and that there is adequate change;
  • Issue receipts or change due to customers;
  • Maintain clean and orderly cashier desk;
  • Resolve customer complaints related to financial transactions;
  • Sort, count, and wrap currency and coins;
  • Calculate total payments received during a time period, and reconcile this with total sales;
  • Keep periodic balance sheets of amounts and numbers of transactions;
  • Assist with payment of company bills by cash, vouchers, or cheques;
  • Assist with banking transactions for the company;
  • Carry out other cashier/finance related duties as requested.

Qualifications

Minimum of two years experience in an environment handling cash and financial transactions. In addition;

Education Requirements

Relevant post-High School qualification preferably in accounts or finance.

 

Bar & Restaurant Supervisor

Principal Duties and Responsibilities

  • Supervise the restaurant to ensure that standards of service are met through all guests’ interactions;
  • Observe performance and encourage improvement where necessary;
  • Communicate pertinent information to the staff, such as menu changes or required general or specific improvements needed either individually to concerned staff or in staff meetings;
  • Communicate effectively, both verbally and in writing, to provide clear direction to the staff;
  • Ensure staffing levels are accurate based on restaurant business levels and help refine existing alternating shifts to best respond to business needs;
  • Assist the management in identifying, interviewing, selecting, training, supervising, counselling and disciplining staff;
  • Communicate with guests and employees using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions and provide accurate information;
  • Ensure basic standard operating procedures for The Well are in place and are in compliance with health and safety requirements, other county/national government regulations and The Well’s own standards;
  • Interact positively with customers promoting facilities and services. Resolve problems to the satisfaction of involved parties;
  • Move throughout the facility and kitchen areas to visually monitor and take action to ensure food quality and service standards are met. Verify temperatures, judge appearance and taste of products and check preparation methods to determine quality. Give guidance toward improvement and make necessary adjustments for consistency.
  • Utilize POS system to accurately charge customers;
  • Ensure that cleanliness is maintained;
  • Solicit feedback from guests concerning the service and food & beverage offerings;
  • Work closely with the Manager in beverage inventory and regular glass/cutlery inventory;
  • Assist the Manager in planning and setting up special events;
  • Carry out other duties as required by the Director.

Qualifications

Minimum 4 years experience providing the required knowledge, skills and abilities.

Education Requirements

Relevant post-High School qualification preferably in the area of hospitality and food.
